{"id":198,"date":"2020-12-21T14:20:11","date_gmt":"2020-12-21T14:20:11","guid":{"rendered":"https:\/\/www.fraser-clark.com\/food\/?p=198"},"modified":"2020-12-21T19:32:45","modified_gmt":"2020-12-21T19:32:45","slug":"fattet-fatteh-chicken","status":"publish","type":"post","link":"https:\/\/www.fraser-clark.com\/food\/archives\/198","title":{"rendered":"Fattet\/Fatteh Chicken"},"content":{"rendered":"\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p>The chicken can also be done in the Weber or spatch-cocked on the braai.<\/p><cite>Luani<\/cite><\/blockquote>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>1 large free range chicken<\/li><li>juice of half a lemon<\/li><li>2 tablespoons olive oil<\/li><li>salt &amp; black pepper<\/li><li>sumac<\/li><li>40g butter<\/li><li>80-100g pine nuts<\/li><li>2 pita breads<\/li><li>800ml greek style yoghurt<\/li><li>2 cloves garlic, crushed<\/li><li>2 teaspoons tahini<\/li><li>sea salt flakes to season<\/li><li>milk<\/li><li>1 x 400g tin chickpeas, drained and rinsed<\/li><li>juice of half a lemon<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Method<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Pre-heat oven to 200\u00b0C.  Rinse chicken and pat dry.<\/li><li>Rub the chicken with a mixture of the lemon juice, salt and pepper &#8211; marinade in the fridge for 30 minutes<\/li><li>Roast the chicken breast side down for the first 30 minutes and then turn over and roast for 20 minutes per 500g.<\/li><li>Melt the butter in a non-stick frying pan over medium heat and saute the pine nuts until golden.  Drain on paper towel and set aside.<\/li><li>Turn on grill, split the pita breads open into rounds, toast until crisp and cut in wedges<\/li><li>Mix yoghurt with garlic &amp; tahini, season with salt.  Mix with a little milk if it needs thinning.<\/li><li>Rest chicken under foil for a few minutes &#8211; keep the resting juice!<\/li><li>Wipe clean non-stick pan, strain resting juice into it.
