{"id":291,"date":"2020-12-24T13:34:37","date_gmt":"2020-12-24T13:34:37","guid":{"rendered":"https:\/\/www.fraser-clark.com\/food\/?p=291"},"modified":"2020-12-24T13:34:39","modified_gmt":"2020-12-24T13:34:39","slug":"gin-tonic-cake","status":"publish","type":"post","link":"https:\/\/www.fraser-clark.com\/food\/archives\/291","title":{"rendered":"Gin &#038; Tonic Cake"},"content":{"rendered":"\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p><\/p><cite>Simon Rimmer, Sunday Brunch<\/cite><\/blockquote>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Syrup<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>Zest and juice of 3 lemons<\/li><li>12 juniper berries<\/li><li>100g sugar<\/li><li>150ml tonic<\/li><li>75ml gin<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>150g whipped cream<\/li><li>100g lemon curd<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Sponge<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>Zest and juice of 1 lemon<\/li><li>50ml gin<\/li><li>200g butter<\/li><li>200g sugar<\/li><li>200g self raising flour<\/li><li>3 eggs<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Method<\/h2>\n\n\n\n<p>Cake: Beat the sugar, butter and zest until fluffy &#8211; use an electric whisk.  Add the egg gradually, then add the flour, then lemon and gin.<\/p>\n\n\n\n<p>Spoon into a lined loaf tin.
