{"id":328,"date":"2020-12-29T17:08:55","date_gmt":"2020-12-29T17:08:55","guid":{"rendered":"https:\/\/www.fraser-clark.com\/food\/?p=328"},"modified":"2022-01-20T13:22:52","modified_gmt":"2022-01-20T13:22:52","slug":"vanilla-ice-cream","status":"publish","type":"post","link":"https:\/\/www.fraser-clark.com\/food\/archives\/328","title":{"rendered":"Vanilla Ice Cream"},"content":{"rendered":"\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p>Rich vanilla ice cream &#8211; to go with an apple terrine and salted caramel sauce!<\/p><cite>Raymond Blanc<\/cite><\/blockquote>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>6 large free range egg yolks<\/li><li>100g caster sugar<\/li><li>250ml whole milk<\/li><li>250ml double cream<\/li><li>2 teaspoons vanilla bean paste (or 2 pods seed scraped out)<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Method<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>In a large mixing bowl, cream together the egg yolks and sugar until a pale straw colour.<\/li><li>Combine the milk, cream and vanilla paste in a heave-bottomed saucepan, bring to the boil and simmer for about 5 minutes.  Remove from the heat and leave to cool for 30 seconds.<\/li><li>Pour the milk onto the eggs and sugar, whisking continuously, then return the mixture to the saucepan.  Cook over a low heat, stirring continuously, to thicken the custard until it coats the back of a wooden spoon.
