{"id":441,"date":"2021-03-27T16:23:32","date_gmt":"2021-03-27T16:23:32","guid":{"rendered":"https:\/\/www.fraser-clark.com\/food\/?p=441"},"modified":"2021-03-27T16:23:34","modified_gmt":"2021-03-27T16:23:34","slug":"oxtail-with-pancetta-and-grapes","status":"publish","type":"post","link":"https:\/\/www.fraser-clark.com\/food\/archives\/441","title":{"rendered":"Oxtail with Pancetta and Grapes"},"content":{"rendered":"\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p>This wonderfully hearty comfort dish is inspired by the great Elizabeth David\u2019s French Provincial Cooking.<\/p><cite>Matt Tebbutt<\/cite><\/blockquote>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>2 tbsp\u00a0olive oil<\/li><li>250g\/9oz piece\u00a0pancetta\u00a0with rind, diced<\/li><li>2 small brown\u00a0onions, thinly sliced<\/li><li>2 sticks\u00a0celery, roughly chopped<\/li><li>2\u00a0carrots, roughly chopped<\/li><li>1\u00a0bay leaf<\/li><li>2 sprigs\u00a0thyme<\/li><li>4\u00a0garlic\u00a0cloves, roughly chopped<\/li><li>pinch\u00a0mace<\/li><li>2kg\/4lb 8oz\u00a0oxtail<\/li><li>1kg\/2lb 4oz white seedless\u00a0grapes<\/li><li>salt and freshly ground\u00a0black pepper<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Method<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat the oven to 160C\/140C Fan\/Gas 3. Heat the oil in a pan and fry the pancetta until browned. Add the onion, celery, carrots, bay leaf, thyme, garlic and mace and cook for a further 2\u20133 minutes.<\/li><li>Add the oxtail to the pan and allow it to brown a little, then add most of the grapes, lightly crushed (reserve some of the grapes whole for garnish). Cover the pan, transfer to the oven and let it cook slowly for 3\u20134 hours, or until tender.<\/li><li>Remove the oxtail from the pot, along with some of the pancetta and set aside in a warm place. Pass the sauce through a ricer or sieve, pressing the softened vegetables into the sauce. Taste and add salt and freshly ground black pepper if necessary.<\/li><li>To serve, place the oxtail on a serving plate and spoon the sauce over the top.
