{"id":531,"date":"2021-11-01T15:33:27","date_gmt":"2021-11-01T15:33:27","guid":{"rendered":"https:\/\/www.fraser-clark.com\/food\/?p=531"},"modified":"2021-11-01T15:33:29","modified_gmt":"2021-11-01T15:33:29","slug":"beef-massaman-curry","status":"publish","type":"post","link":"https:\/\/www.fraser-clark.com\/food\/archives\/531","title":{"rendered":"Beef Massaman Curry"},"content":{"rendered":"\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p>Thai and Indian fusion curry<\/p><\/blockquote>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>85g\u00a0unsalted peanuts<\/li><li>400ml\u00a0can coconut milk<\/li><li>4 tbsp\u00a0<a href=\"https:\/\/www.fraser-clark.com\/food\/archives\/218\">massaman curry paste<\/a><\/li><li>600g\u00a0stewing beef steak,\u00a0cut into large chunks<\/li><li>450g\u00a0waxy potatoes,\u00a0cut into 2.5cm chunks<\/li><li>1\u00a0onion,\u00a0cut into thin wedges<\/li><li>4\u00a0kaffir lime\u00a0leaves (available from Thai shops or dried from supermarkets)<\/li><li>1\u00a0cinnamon stick<\/li><li>1 tbsp\u00a0tamarind\u00a0paste<\/li><li>1 tbsp\u00a0palm or soft light brown sugar<\/li><li>1 tbsp\u00a0fish sauce<\/li><li>1\u00a0red chilli,\u00a0deseeded and finely sliced, to serve<\/li><li>jasmine rice,\u00a0to serve<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Method<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Heat oven to 200C\/180C fan\/gas 6, then roast the peanuts on a baking tray for 5 mins until golden brown. When cool enough to handle, roughly chop. Reduce oven to 180C\/160C fan\/gas 4.<\/li><li>Heat 2 tbsp coconut milk (use the cream on top if there is any) in a large casserole dish with a lid. Add the curry paste and fry for 1 min, then stir in the beef and fry until well coated and sealed.<\/li><li>Stir in the rest of the coconut with half a can of water, the potatoes, onion, lime leaves, cinnamon, tamarind, sugar, fish sauce and most of the peanuts.
