{"id":784,"date":"2022-06-21T10:57:19","date_gmt":"2022-06-21T09:57:19","guid":{"rendered":"https:\/\/www.fraser-clark.com\/food\/?p=784"},"modified":"2022-06-21T10:57:19","modified_gmt":"2022-06-21T09:57:19","slug":"flourless-chocolate-and-cognac-cake","status":"publish","type":"post","link":"https:\/\/www.fraser-clark.com\/food\/archives\/784","title":{"rendered":"Flourless Chocolate and Cognac Cake"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<p>600g dark chocolate<\/p>\n\n\n\n<p>6 eggs, separated<\/p>\n\n\n\n<p>150g sugar<\/p>\n\n\n\n<p>100ml cognac<\/p>\n\n\n\n<p>300ml double cream<\/p>\n\n\n\n<p>cocoa powder and icing sugar to dust<\/p>\n\n\n\n<p>200g cr\u00e8me fraiche<\/p>\n\n\n\n<p>1 tsp vanilla extract<\/p>\n\n\n\n<p>200g raspberries<\/p>\n\n\n\n<p>50g icing sugar<\/p>\n\n\n\n<p>50ml cognac<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Method<\/h2>\n\n\n\n<p>1. Melt the chocolate<\/p>\n\n\n\n<p>2. Beat the yolks and half the sugar for 5 minutes, then add the cognac<\/p>\n\n\n\n<p>3. Fold in all the chocolate and half the cream, then whip the rest of it<\/p>\n\n\n\n<p>4. Beat the egg whites until stiff, add the sugar<\/p>\n\n\n\n<p>5. Fold in the whipped cream, to the choc mix<\/p>\n\n\n\n<p>6. Add the egg white mix<\/p>\n\n\n\n<p>7. Spoon into a greased lined 20cm cake tin<\/p>\n\n\n\n<p>8. Bake in a bain-marie for 45 mins at 180\u00b0c, turn down to 150\u00b0c and bake 40 minutes more<\/p>\n\n\n\n<p>9. Turn out, be careful its very fragile<\/p>\n\n\n\n<p>10. Dust with cocoa and icing sugar<\/p>\n\n\n\n<p>11. Beat the vanilla into the cr\u00e8me fraiche<\/p>\n\n\n\n<p>12. Add icing sugar and booze to raspberries, leave for 20 minutes minimum<\/p>\n\n\n\n<p>13.
