{"id":799,"date":"2022-08-15T14:05:27","date_gmt":"2022-08-15T13:05:27","guid":{"rendered":"https:\/\/www.fraser-clark.com\/food\/?p=799"},"modified":"2022-08-15T14:09:45","modified_gmt":"2022-08-15T13:09:45","slug":"haggis-toasties","status":"publish","type":"post","link":"https:\/\/www.fraser-clark.com\/food\/archives\/799","title":{"rendered":"Haggis Toasties"},"content":{"rendered":"\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p>Excellent Haggis toasties, with plenty of gooey melted cheddar and a pinch of pickled onions on the side.<\/p><\/blockquote>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Haggis, cooked &amp; warmed up<\/li><li>1 large red onion<\/li><li>2 tbsp red or white wine vinegar<\/li><li>1 tsp raw cane sugar<\/li><li>mature cheddar cheese, grated<\/li><li>slices of thick cut sourdough or granary bread<\/li><li>English mustard (or Dijon works fine too)<\/li><li>caramelised onion chutney<\/li><li>100g butter, room temperature<\/li><li>1 garlic clove, crushed.<\/li><li>Rocket leaves<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Method<\/h2>\n\n\n\n<p>Pickled onions:  thinly slice the red onion into a bowl.  Add vinegar, sugar and a pinch of salt.  Scrunch up and set aside.<\/p>\n\n\n\n<p>Mix the crushed garlic into the butter.<\/p>\n\n\n\n<p>Butter the outside of all the slices with the garlic butter.  Spread a little mustard on the inside of one slice of each bread and caramelised onion chutney on the other.  Sprinkle some cheese on the mustard, then add the cooked &amp; warmed Haggis.  Place a couple of rocket leaves on, then some more cheese and sandwich with the chutney slice of bread.<\/p>\n\n\n\n<p>Fry toasties in a medium hot pan for 4-5 mins a side, pressing down occasionally, until cheese is melted and outsides are golden and crispy.
