{"id":923,"date":"2023-10-26T11:29:42","date_gmt":"2023-10-26T10:29:42","guid":{"rendered":"https:\/\/www.fraser-clark.com\/food\/?p=923"},"modified":"2023-10-26T11:29:42","modified_gmt":"2023-10-26T10:29:42","slug":"mushroom-and-brie-soup","status":"publish","type":"post","link":"https:\/\/www.fraser-clark.com\/food\/archives\/923","title":{"rendered":"Mushroom and Brie Soup"},"content":{"rendered":"\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p>A classic creamy mushroom soup kicked up a notch with lots of luxurious Brie cheese.<\/p>\n<\/blockquote>\n\n\n\n<p>(From <a href=\"https:\/\/theviewfromgreatisland.com\/mushroom-and-brie-soup-recipe\/\">https:\/\/theviewfromgreatisland.com\/mushroom-and-brie-soup-recipe\/<\/a>)<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 1\/2 pounds cremini mushrooms, use any variety you like<\/li>\n\n\n\n<li>2 tbsp unsalted butter<\/li>\n\n\n\n<li>2-3 large shallots, peeled and fileny diced<\/li>\n\n\n\n<li>3 cloves garlic, finely chopped<\/li>\n\n\n\n<li>2 tbsp flour<\/li>\n\n\n\n<li>1\/2 cup Marsala wine<\/li>\n\n\n\n<li>2 cups chicken stock, or veggie stock<\/li>\n\n\n\n<li>2 tbsp fresh thyme leaves<\/li>\n\n\n\n<li>salt and freshly cracked black pepper to taste<\/li>\n\n\n\n<li>1\/2 cup heavy cream (double cream)<\/li>\n\n\n\n<li>6 ounces Brie cheese, rind removed, cut in chunks<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Set oven to 400F (200C)<\/li>\n\n\n\n<li>Brush the mushrooms with a clean dish towel to clean them, do not get them wet.<\/li>\n\n\n\n<li>Trim the stem ends, and then quarter the mushrooms. Put on a dry baking sheet and bake for 20-25 minutes, tossing them a couple of times. They will lose their moisture, shrink up, and brown.<\/li>\n\n\n\n<li>Meanwhile melt the butter in a large skillet and saute the shallots for 5 minutes, then add the garlic and saute another 5 minutes until the shallot has softened.<\/li>\n\n\n\n<li>Stir in the flour and cook, stirring, for a minute. Add the wine and stir to deglaze the pan.<\/li>\n\n\n\n<li>Add the stock, the mushrooms, and the fresh thyme, and bring up to a simmer. Turn down the heat, cover and gently simmer for about 15 minutes. Season to taste with salt and fresh cracked black pepper.<\/li>\n\n\n\n<li>Add the cream and the cubed Brie. Stir to melt the cheese.<\/li>\n\n\n\n<li>Puree the soup, in batches. Taste to adjust the seasonings, and add a bit more stock or water if it seems too thick.<\/li>\n\n\n\n<li>Serve with a garnish of sliced mushrooms and more fresh thyme.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>A classic creamy mushroom soup kicked up a notch with lots of luxurious Brie cheese.
