Massaman Curry Paste
									Ingredients
- 15 dried red chillies
 - 1 tablespoon coriander seeds, ground
 - 1 teaspoon cumin seeds, ground
 - 1 stick cinnamon, ground
 - 3 cloves, ground
 - 4 peppercorns, ground
 - 4 tablespoons garlic, chopped
 - 4 tablespoons shallots, chopped
 - 1 heaped teaspoon shrimp paste
 - 1 – 2 stick lemongrass, chopped
 - 1 teaspoon fish sauce
 
Method
- Soak chillies in water for 10 minutes. Deseed.
 - Dry-fry dry spices in wok then grind to a powder
 - Add all the other ingredients and grind to a fine paste.
 - Store in refrigerator for up to 3 months.
