Black Garlic Puree
									Black garlic puree (like a mayonnaise made with black garlic).
Ingredients
- 190g peeled black garlic
 - 85ml water
 - 15g xanathan gum
 - 2.5g salt
 - 15g white wine vinegar
 - 15 caster sugar
 
Method
- Place all ingredients in a Thermomix set to 60C and blitz until smooth
 - Alternatively, place all ingredients in a blender but with boiling water instead of cold water.
 - Pass through a fine sieve and set aside to cool.
