Steamed Rhubarb Pudding

Steamed rhubarb pudding – Simon Rimmer, Sunday Brunch
Ingredients
- 450g forced rhubarb
- 125g sugar
- zest of 1 orange
- 1/2 teaspoon ground star anise
- 75g syrup
- 100g butter
- 2 teaspoons vanilla
- 2 eggs
- 100g self raising flour
- 50ml milk
500ml good quality ready made custard
100ml condensed milk
1 teaspoon vanilla
Method
- Chop rhubarb into bite size pieces. Cook for 5 minutes with 25g sugar and zest. Cool.
- Butter a 1 litre pudding basin
- Mix the syrup and rhubarb, spoon into the basin.
- Beat the butter and the sugar, then add the eggs, then flour and vanilla and milk.
- Spoon onto the rhubarb.
- Cover with parchment. Tie.
- Put in a large pot with water. 2/3
- Steam for 1.5 hours, cool slightly
- Turn out
- Heat custard, milk & vanilla
- Serve pudding with lashings of custard
