Pumpkin Tart
									Ingredients
For the Tart
- 125g butter
 - 160g sugar
 - 3 eggs, beaten
 - 140g self-raising flour
 - 2 ml salt
 - 400g grated, raw, pumpkin
 - 5ml vanilla essence
 
For the Sauce
- 125g butter
 - 125ml cream or 170g evaporated milk
 - 60ml sugar
 
Method
- Cream butter and sugar until light
 - Add eggs little by little while beating
 - Add dry ingredients
 - Mix in pumpkin and vanilla
 - Pour into a buttered oven-proof dish
 - Bake for 45 minutes at 180°C
 
Heat sauce ingredients together until almost boiling. Pour over warm tart.
This can be enjoyed as either a dessert or a side dish to a main course.
Excellent with a braai!
